Green Goddess Dressing (Low Lectin)

February 23, 2026

My recipes focus on reducing lectin load through thoughtful preparation rather than extreme restriction. Instead of eliminating entire food groups, I prioritize ingredient selection, peeling and deseeding when needed, proper cooking methods, and pairing foods in ways that support digestion. The goal is simple: create meals that feel grounding, satisfying, and easier on the gut. This low-lectin Green Goddess dressing is a perfect example. Built on ripe avocado, fresh herbs, lemon juice, and extra virgin olive oil, it keeps the vibrant flavor of the classic version while avoiding common irritants like industrial seed oils or heavy raw ingredients. It’s creamy, fresh, and versatile enough to use as a dressing, dip, or sauce. Proof that small shifts in preparation can make a meaningful difference.

Living low-lectin isn’t about fear or perfection. It’s about paying attention to how ingredients are prepared and how your body responds over time. Sometimes the difference between a meal that energizes you and one that leaves you uncomfortable comes down to the details like the fats you choose, the herbs you add, and the way everything is combined. If you’d like to explore the deeper science behind lectins, gut health, and preparation methods, along with more recipes and lifestyle guidance, you can find the full article and additional resources on my website. Sometimes real change begins with something as simple as a blender, fresh herbs, and a perfectly ripe avocado.
