Quinoa Salad with Mango, Sprouts, Nuts and Berries

Ingredients:
- For the Salad
- 1⁄2 cup cooked kidney beans
- 3 tbsps dried goji berries
- 1 mango (diced)
- 1 medium red bell pepper (sliced)
- 3 1⁄2 oz salad greens
- 1 3⁄4 oz seed sprouts
- 1⁄2 cup sweet corn
- 1 oz walnut halves (crushed)
- For the Quinoa
- 1⁄2 cup quinoa
- 1 cup water
Directions:
- Boil the quinoa in water until soft for 20 minutes.
- Mix the quinoa with the goji berries, kidney beans, sweet corn, walnut halves and the salad dressing.
- Put the salad greens, bean sprouts and bell pepper on a plate or a bowl and add the rest of the ingredients.
