Japanese Noodles with Creamy Pumpkin and Avocado Sauce

Ingredients:
For the Sauce
- 2 avocados (mashed)
- 1 tsp dried coriander seed powder
- 16 oz pumpkin (grated)
- 2 tsps sea salt
- 1 tablespoon sesame oil
- 1 cup soy milk
- 1 sweet onion (thinly chopped)
For the Noodles
- 8 oz mie noodles (without egg)
Directions:
- Use a big skillet add the sesame oil and saute the onion for about 3-5 minutes.
- Add the grated pumpkin and saute until soft for another 5-10 minutes.
- Add the rest of the ingredients for the sauce and set aside.
- Preheat a big pot of water and boil the noodles for about 3-5 minutes until dente.
- Serve the noodles with some sauce on top and sprinkle with paprika powder.
- Or you mix the noodles with the sauce before serving.
