Parsley Mushroom Diabetic Friendly Recipe

Servings: 4-8
Ingredients:
- 1 tsp Olive Oil
- ½ cup chopped onions
- ½ tsp chopped garlic
- 1 cup chopped mushrooms
- 1 tbsp dried red chili chopped
- 1 tsp black pepper powder
- Salt to taste
- 1 cup chopped parsley
- ½ cup chopped tomatoes
- 1 tbsp lemon juice
- 4 whole wheat pizza bases
- Sliced spring onion to garnish
- Black olives to garnish
Directions:
- In a pan, heat some olive oil. Now add the chopped onions, garlic, mushrooms & red chillis. Also add black pepper powder, salt, parsley & tomatoes. Mix well. Now add some lemon juice and let this mixture cook (on a medium flame) for some time.
- Once cooked, spread this mixture over rounds of whole wheat pizza bases. Garnish with green onions and olives.
