  • 1 to 3 tablespoons warm water or unsweetened almond milk, as needed
  • 1 teaspoon sea salt, or to taste
  • Freshly ground black pepper, optional
  • Fresh parsley or chives for garnish, optional
Directions:
  1. Bring a large pot of water to a boil. Lightly salt the water.
  2. Add the cauliflower florets and whole garlic cloves to the pot.
  3. Cook for 10 to 12 minutes, or until the cauliflower is fork-tender.
  4. Drain thoroughly in a colander. Allow the cauliflower to sit for several minutes to release excess steam. This step is important for achieving a creamy texture.
  5. Transfer the cauliflower and garlic to a food processor or high-speed blender.
  6. Add olive oil and sea salt. Blend until smooth.
  7. If needed, add small amounts of warm water or almond milk to reach desired consistency.
