This healthy Avocado Lemon Cake in a mug is a fast, easy and delicious breakfast, snack or dessert. It’s the perfect all season treat made with real food ingredients such as flour, coconut, sugar, baking powder, mashed avocado, coconut oil, milk, lemon zest, and finally vanilla ice cream.

- 3 tbsp plain flour
- 1 tbsp desiccated coconut
- 2 tbsp sugar
- ½ tsp baking powder
- 2 tbsp finely mashed avocado
- ½ tbsp coconut oil
- 2½ tbsp milk
- ¼ tsp lemon zest
- In a microwave safe mug, mix in all the dry ingredients.
- Add in the avocado mash, milk, coconut oil and lemon zest.
- Mix well and put it in the microwave for about 1 minute.
- Top with vanilla ice cream and serve.
