Date and Walnut Muffins

Ingredients:
- 250g chopped dates
- 2 tablespoon chopped walnuts
- 1 cup water
- 1 teaspoon bicarbonate of soda
- 1 teaspoon baking powder
- 2 tablespoon butter
- 2 cups self-raising flour
- 1 cup or 200g Natvia
- 1 egg, beaten
Directions:
- Pre heat oven to 165 degrees.
- Place muffin cases in a muffin pan.
- Place dates into water and bring to boil. Add bicarbonate of soda and butter and stir. Sift flour and baking powder into a bowl and add the walnuts, Natvia and egg, then mix in the date mixture.
- Fill each muffin case to 2/3 full and bake for 15-18 minutes. Cool and serve.
Notes:If you are after a healthy treat use wholemeal flour and mix with bran or use gluten free flour (if you require).[br]Depending on your taste you can increase or decrease quantity of Natvia.
