Ingredients:
For the Vegetables
- 2 large carrot (chopped)
- 1 tsp extra virgin olive oil
- 1 inch ginger (grated)
- 5 oz green beans (chopped)
- 1 large onion (chopped)
- 1 large red bell pepper (diced)
- 10 oz sweet potato (diced)
For the Stew
- 2 cups carrot juice
- 1 dash chili powder
- 1⁄4 cup chunky peanut butter
- 1 lime (juiced)
- 1 tsp paprika powder
- 1 tsp sea salt
- 2 medium tomato (diced)
- 1 tsp turmeric powder
For the Rice
- 1 1⁄2 cups brown rice
- 3 cups water
Directions:
- Use a big pot and boil the rice in the water until soft for about 30-40 minutes.
- Preheat the coconut oil in a big pot and saute the onion for about 5 minutes.
- Add the carrot, bell pepper, sweet potato, ginger and green beans and fry those for another 5 minutes as well.
- Add the rest of the ingredients for the stew to the pot and let it simmer on medium heat for about 30 minutes until the vegetables are soft.
- Adjust the taste of the stew and serve it with brown rice.
